Did you know dehydrating Rhubarb is a definite must!
Want to have the sweet treat, that also has that sour flavour? Whohoo! Talk about making your own sour/sweet candy right from home while curbing that sensation of something treat-ish. Is that a word? Doesn’t matter if it is not I will say it is. Believe me it takes “really good” :-).
Things you will need: rhubarb, sharp knife, organic sugar, dehydrator.

Directions
- Cut rhubarb into longer slices (not too thin as when dehydrated it shrinks!). Example a large stock of rhubarb I will cut into 3 pieces, then I will cut those pieces in half or sometimes 1/3.
- Take your organic sugar and put it on a plate or bowl. Then roll your rhubarb into the sugar. (I have also done this where I shake it in a bag to coat with sugar). You choose which method works for you.
- Place on your dehydrator sheet and continue to fill sheet. (I have put a teflon coated dehydrator sheet on the bottom of my dehydrator to catch any melted sugar that might occur – just easy to wash off).
- Choose your fruit setting on your dehydrator. Mine dehydrated for about 16 hours. Check yours as all dehydrators are different. But this gives you a guideline for time.
- Store in a mason jar once the moisture has been removed. Enjoy!
